These quick and super easy to make oat cookies are perfect for a small snack or a quick breakfast. They are made from wholesome ingredients and sugar- and oil-free. Additionally, the walnuts and flaxseeds inside provide your body with healthy fats.
If you can't find mulberries or don't like walnuts, you can easily replace them with other dried berries and nuts. I recommend storing them in a air-tight container in the fridge.
INGREDIENTS (14 cookies)
2 ripe bananas
1 teaspoon baking powder
1 tablespoon flaxseeds
2 tablespoons water
20g mulberries
50g walnuts
150g oats
a pinch of salt
METHOD
Pre-heat the oven to 180°C and spread a baking sheet onto a baking tray.
Grind the flaxseeds in a blender and mix it with 2 tablespoons of water in a small bowl. Put aside for later.
Mash up the ripe bananas in a large bowl.
Add the baking powder, salt and the flaxegg you made in step 2 to the mashed bananas and mix until well combined.
Chop the walnuts and mulberries into small pieces and add them to the banana mix.
Add the oats and mix everything until well combined. Depending on the size of the bananas it is possible that you need more oats in order to make the "dough" thick enough to form cookies. It should have a sticky consistency like on the photo below.
Form cookies with your hands and set them on a baking tray.
Bake for 10-15 min until the cookies are golden-brown on the sides.
Let the cookies cool down a bit and enjoy! They taste best when they are still a bit warm.
